Spanish Recipes – November

This month our Club La Costa chef Jimmy Staros is showing us how to prepare Spanish omelette. This is one of the most classic of Spanish dishes and can be found in any of our Club La Costa bars or restaurants.


Ingredients for 2 persons:

4 eggs

300 gr. of potatoes

1 onion

9 tablespoons of oil olive



1. Cut the potatoes and onion into thin slices and fry slowly in a pan with oil, moving them from time to time so they do not stick to the pan.



2. In a bowl beat the eggs until you create a little froth.





3. Once potatoes and onion are soft, mix with egg. It is very important that the potatoes are hot when mixing the ingredients.





4. Once the mixture is ready we prepare the pan. To do so fill the pan with salt and warm up, we have to perform this operation until no salt is left stuck in it.



5. Once the pan is prepared we take a little oil and let it heat. Once heated, add the entire contents of the bowl and leave it over a high heat.  

6. Once the egg has set, it’s time to turn it over. To do this we need to use a lid or a plate with a larger dimension than the pan.

 7. Return the omelette back into the pan and allow the other side to cook.

8. To know when it is ready, shake the frying pan and check that the omelette does not break up when moved.


9. The end result is this.

A: I really like to combine this dish with other ingredients such as spinach, mushrooms, cheese, and/or ham.
